This week we've decided to focus our Meatless Monday recipes on one of our favorite vegetables, Kale. Kale is a form of cabbage in which the leaves don't form a head. Vitamin-rich and filled with detoxifying components, these nutritious leaves make an excellent dietary staple as there are an endless arrays of way to enjoy it. Here are some of our favorite kale recipes, including a recipe for baked kale chips, pictured left.
