Finding it almost impossible to eat enough vegetables every day? Instead of struggling to eat 8-10 servings of vegetables, try substituting a few of those servings with fresh herbs. Fresh herbs aren't only cheap and extremely easy to grow, they are full of nutrients: Fresh-cut herbs contain more antioxidants to fight heart-disease and cancer than many fruits and vegetables! Even if you don't have a green thumb or particular interest in gardening, all you really need to grow fresh herbs is a bright window. Even if you forget to water them from time to time they will continue to grow as they require minimal attention.
