Here is a family favourite, a crowd pleaser and a no brainer all rolled into one. It's one of those recipes that can literally take ten minutes to put together and this includes taking out all of the ingredients, opening the jars and cans, assembling it and getting it into the oven! It can take much longer if you prepare all of the ingredients from scratch. I have done variations and it ALWAYS comes out perfect, no matter which version. Now how is that for the perfect recipe?!
I discovered this yummy dish on a road trip up to the Yukon. Dawson City to be exact, in this great little restaurant which name I unfortunately cannot remember. The restaurant had all of these wonderful nouvelle-type dishes on the menu, not exactly what you would equate with an old gold rush town! The whole town had a funky hip theme going on, so it is no surprise to find this gem of a restaurant there. As soon as I got home I made up a version of this great find and have been making versions of it ever since!
Ingredients:
- Round Pyrex dish, the deeper it is the more layers you can put.
- Burritos (the large size) package of 8 or more
- Salsa
- Guacamole
- Sour cream
- Cheese Shredded and prepared
- Refried beans
*I usually make this as a vegetarian dish but you can do a layer of seasoned meat or seasoned meat substitute
Directions:
- Preheat oven to 350 (Bakes for 1 hr)
- Put 3 TBS of salsa onto the bottom of the dish and spread it around, take one burrito and place it down. One thing to note- if the burrito doesn't fit the whole bottom cut off a piece from another burrito to make it cover the whole bottom.
- Then spread a layer(or additional layers) of each of your ingredients (one layer guacomole, one layer refried beans, etc.) with a burrito placed and patted down between each new ingredient.
- To complete add a salsa layer (about 3 TBS) top and cover with shredded cheese on top.
- Stick in the oven to bake at 350, wait an hour and enjoy! During the baking process the burrito layers absorb part of the moisture from the layers above and below and end up swelling and tasting like pasta.
*To serve as an appetizer just cut into thin slices.
