Tofu & Avocado Salad

Ingredients (use vegan versions):
- 12 ounces firm regular tofu, 1" cubes
- 2 large avocados, 1" dice
- mixed baby greens
- 3 tablespoons rice vinegar
- 1 tablespoon dark brown sugar or equivalent natural sweetener
- 4 tablespoons sesame oil
- 6 tablespoons light olive oil
- 1 tablespoon miso paste
- 1 finely chopped garlic cloves
- 2 tablespoons grated fresh ginger
- 1 tablespoon toasted sesame seeds
Directions:
- Combine vinegar, sweetener, oils, miso, garlic, ginger and sesame seeds in a large bowl. Whisk until emulsified.
- Toss in tofu and avocado cubes to coat.
- Serve over baby greens.
