What do we need:
- 1 tablespoon olive oil
- 2 oz herb goat cheese
- 2 tbsp flat leaf parsley, minced
- 1 tsp fresh lemon juice
- lemon zest
- 2 C baby spinach
- 1/2 C fresh basil
- black pepper
- sea salt
Steps:
- Preheat grill or grill pan over medium heat.
- Brush zucchini with olive oil and sprinkle with salt and pepper.
- Grill 4-5 minutes per side until soft.
- In a bowl combine goat cheese, lemon, and parsley.
- Spread a small amount (1 tsp) of mixture on the end of each zucchini strip.
- Top with spinach and one basil leaf and roll up.
- Place seam side down on platter and serve!
