Tofu & Avocado Salad

Tofu & Avocado Salad

Ingredients (use vegan versions):

  • 12 ounces firm regular tofu, 1" cubes
  • 2 large avocados, 1" dice
  • mixed baby greens
  • 3 tablespoons rice vinegar
  • 1 tablespoon dark brown sugar or equivalent natural sweetener
  • 4 tablespoons sesame oil
  • 6 tablespoons light olive oil
  • 1 tablespoon miso paste
  • 1 finely chopped garlic cloves
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon toasted sesame seeds

Directions:

  1. Combine vinegar, sweetener, oils, miso, garlic, ginger and sesame seeds in a large bowl.  Whisk until emulsified.
  2. Toss in tofu and avocado cubes to coat.
  3. Serve over baby greens.
