Ingredients
- 1 cup dried green lentils
- 1 cup dried bulgar
- 1/4 cup dried cranberries
- 1/2 carrot diced
- Fresh ground pepper (optional)
For the dressing:
- 1/3 cup vegetable oil or olive oil
- 2 tbsp apple cider vinegar
- 3 tbsp maple syrup, agave or any other sweetener
- 1 tbsp dijon or regular mustard
- Optional sprinkles of oregano, basil and sea salt
Directions
- Rinse bulgar and lentils well
- Place bulgar and lentils together in a large pot with 4 cups of water
- Bring to a boil and let boil for 5 minutes and then cover and bring to a simmer for 20 minutes or until all water is absorbed
- While simmering, combine all ingredients in a blender and blend on high for 30 seconds
- Once grains are cooked, rinse with cold water to cool or refridgerate for 1 hour
- Combine grains with cranberries, carrot and stir in salad dressing
- Serve cold and top with fresh ground pepper if desired, enjoy!
