Lentil and Bulgar Salad (Vegan)

Ingredients

  • 1 cup dried green lentils
  • 1 cup dried bulgar
  • 1/4 cup dried cranberries
  • 1/2 carrot diced
  • Fresh ground pepper (optional)

For the dressing:

  • 1/3 cup vegetable oil or olive oil
  • 2 tbsp apple cider vinegar
  • 3 tbsp maple syrup, agave or any other sweetener
  • 1 tbsp dijon or regular mustard
  • Optional sprinkles of oregano, basil and sea salt

 

Directions

  1. Rinse bulgar and lentils well
  2. Place bulgar and lentils together in a large pot with 4 cups of water
  3. Bring to a boil and let boil for 5 minutes and then cover and bring to a simmer for 20 minutes or until all water is absorbed
  4. While simmering, combine all ingredients in a blender and blend on high for 30 seconds
  5. Once grains are cooked, rinse with cold water to cool or refridgerate for 1 hour
  6. Combine grains with cranberries, carrot and stir in salad dressing
  7. Serve cold and top with fresh ground pepper if desired, enjoy!
