Tofu Sandwich

Ingredients:

  • 1/2 lb of Tofu (crumbled or sliced)
  • 1/4 cup of chopped onions
  • 2 tbsp of dijon mustard
  • Handful on baby spinach/and or lettuce
  • 1 tsp curry powder
  • salt & pepper to taste
  • Your choice of bread: gluten-free, whole wheat, bagel? Versatile.

Directions:

  1. Prepare ingredients and assemble them together for a delicious and healthy sandwich!
