
Ingredients:
- 3 15 oz. cans of Great Northern Beans, drained
- 1 15 oz. can of stewed tomatoes
- 1 15 oz. can of hominy
- 1 can of Rotel diced tomatoes with green chiles
- ½ cup of frozen or drained canned corn
- About 2 cups of water
- 2 tbsp. cilantro
- 1 tbsp. cumin
Directions:
1) Mix all ingredients together in a very large kettle. 2) Bring to a quick boil. Then reduce heat to a simmer. 3) Simmer for about 20 minutes. 4) Serve steaming hot by itself or with your choice of toppings: cheese, sour cream, olives, diced red onion, diced avocado, or tortilla chips.
