French Onion Soup

Ingredients:

  • 1 large onion or 2 small, quartered and then very finely sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Pinch salt (1/4 tsp or less)
  • 1/2 tsp sugar
  • 2 tsp plain flour
  • 1 small glass port/madeira/sherry/vermouth/white wine (and you could even add a bit of brandy as well if you’ve had a rough day)
  • 3/4 pt (just over 400ml) chicken stock

 

Directions:

  1. Heat the oil and butter, add the salt and onion and fry very very slowly and gently for 30 minutes, stirring occasionally.
  2. Add the sugar and cook another 20 minutes, stirring until the onions are almost pureed.
  3. Add the flour and cook, stirring for 2 minutes.
  4. Add 1 small glass of the alcohol of your choice and stir into the mixture.
  5. When it bubbles, add the stock, cover and simmer for 30 minutes.
