Ingredients:
- 1 large onion or 2 small, quartered and then very finely sliced
- 2 tbsp olive oil
- 1 tbsp butter
- Pinch salt (1/4 tsp or less)
- 1/2 tsp sugar
- 2 tsp plain flour
- 1 small glass port/madeira/sherry/vermouth/white wine (and you could even add a bit of brandy as well if you’ve had a rough day)
- 3/4 pt (just over 400ml) chicken stock
Directions:
- Heat the oil and butter, add the salt and onion and fry very very slowly and gently for 30 minutes, stirring occasionally.
- Add the sugar and cook another 20 minutes, stirring until the onions are almost pureed.
- Add the flour and cook, stirring for 2 minutes.
- Add 1 small glass of the alcohol of your choice and stir into the mixture.
- When it bubbles, add the stock, cover and simmer for 30 minutes.
