Fresh Summer Gazpacho

What do we need:

  • 4-6 large tomatoes
  • 1 medium cucumber
  • 1 bell pepper of any color
  • 1/2 yellow onion
  • 1 clove garlic
  • juice of 1 lemon
  • small bunch of fresh cilantro
  • 1 teaspoon black pepper (add to taste)
  • 1 teaspoon salt (add to taste)

Steps:

  • Thoroughly wash all veggies first.

  • Then, place the tomatoes in a blender or food processor and blend until smooth.

  • Then chop the rest of the veggies in the blender/food processor or by hand and add to tomatoes.

  • Finally, stir the veggies with the salt and pepper and lemon juice.

  • For best results, chill in the fridge for at least one hour before serving. This allows the flavors to mingle with each other nicely.
