Vegan Chili

Vegan Chili

Ingredients: (Use vegan versions)

  • 16 ounces black beans
  • 16 ounces kidney beans
  • 2 celery stalks
  • 1 red onion, chopped
  • 1 yellow zucchini, chopped
  • 1 cup carrots, shredded
  • 1 green bell pepper, chopped
  • 2 russet potatoes, cut into cubes
  • 3 to 4 cups crushed tomatoes
  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 1 jalapeno pepper
  • 1 cup water


Directions:

  1. Put all ingredients into a pot and bring to a boil. Cover and simmer for two hours, stirring occasionally. Now eat.
One cup is about 150 calories.


Makes: 12 servings, Preparation time: 20 minutes, Cooking time: 2 hours
