Vegan Chili

Ingredients: (Use vegan versions)
- 16 ounces black beans
- 16 ounces kidney beans
- 2 celery stalks
- 1 red onion, chopped
- 1 yellow zucchini, chopped
- 1 cup carrots, shredded
- 1 green bell pepper, chopped
- 2 russet potatoes, cut into cubes
- 3 to 4 cups crushed tomatoes
- 1 tablespoon chili powder
- 1 1/2 teaspoon cumin
- 2 teaspoon salt
- 1 teaspoon pepper
- 1 jalapeno pepper
- 1 cup water
Directions:
- Put all ingredients into a pot and bring to a boil. Cover and simmer for two hours, stirring occasionally. Now eat.
One cup is about 150 calories.
Makes: 12 servings, Preparation time: 20 minutes, Cooking time: 2 hours
